This hands-on class explores how to recreate the flavors and textures of traditional coastal seafood dishes using plant-based ingredients. Participants will learn techniques that mimic classic seafood textures without animal products.

– Explore flavor layering with herbs, citrus, and classic coastal seasonings

Class 2: Elegant Plant-Based Plates
Participants will learn how to transform whole vegetables into an elegant entrée reminiscent of fine dining seafood dishes. This class focuses on achieving proper sear and plating techniques, and on balancing richness with fresh, seasonal components.
– Master vegetable cutting techniques to replicate scallop presentation
– Learn high-heat searing methods for caramelization
– Practice creating smooth vegetable purées
– Explore restaurant-style plating and presentation skills

Class 3: Sunday Supper Reimagined
This hands-on class transforms iconic Southern comfort food into a nourishing, plant-based experience. Participants will prepare crispy seasoned cauliflower inspired by classic fried chicken, paired with a creamy dairy-free mac and cheese and sautéed Southern-style greens. The focus is on flavor, texture, and honoring tradition while embracing wellness.
– Learn techniques for creating crispy coatings without deep frying
– Understand how to build bold Southern seasoning profiles
– Explore plant-based cream sauce development using whole-food ingredients
– Practice proper sautéing and seasoning of leafy greens
– Discuss healthier adaptations of traditional comfort foods

Class 4: Bayou Comfort Bowl
Inspired by Louisiana-style home cooking, this class introduces participants to deeply flavorful red beans and dirty rice made entirely plant-based, paired with a golden skillet cornbread. Guests will explore smoky spices, layered aromatics, and soulful cooking techniques rooted in Southern culinary heritage.
– Learn foundational techniques for building depth of flavor with aromatics
– Understand how to create smoky, savory profiles without meat
– Practice proper rice cooking methods for texture and structure
– Explore balancing spice, heat, and herbaceous notes
– Gain confidence in one-pot Southern-style meal preparation
